Breakfast is my favourite meal of the day. I also think it is probably the most rushed or skipped Meal of the day for most people. We would rather spend an extra 15 minutes in bed ( I am so guilty of this) than make a good Breakfast & start our days off right, but it really makes all the difference to your day.
Today I made Poached Eggs, Mashed Avocado and Crumpets and this is how I made it.
- Two Crumpets, toasted with a little bit of light butter. (Lurpak is my butter of choice).
- Half an Avocado, mashed with a pinch of Salt, Pepper and Chilli Flakes.
- Two Eggs, poached in boiling water for 3.5 minutes .
- I poach my eggs by putting cling film around the top of a mug, dropping the egg in the cling film and wrapping it up – drop the cling film into the boiling water for 3.5 minutes. Unwrap the egg and pop it on your crumpet. Clean, Easy and you get the perfect poached egg.
Pop a pinch of Salt and Pepper on top of the eggs & sit down and enjoy!
It takes 5 minutes & it is yummy, healthy and it will start your day off right. Treat yourself babes, you deserve it!
