The Perfect Quick & Easy Breakfast 🍳 

Breakfast is my favourite meal of the day. I also think it is probably the most rushed or skipped Meal of the day for most people. We would rather spend an extra 15 minutes in bed ( I am so guilty of this) than make a good Breakfast & start our days off right, but it really makes all the difference to your day.

Today I made Poached Eggs, Mashed Avocado and Crumpets and this is how I made it.

  • Two Crumpets, toasted with a little bit of light butter. (Lurpak is my butter of choice).
  • Half an Avocado, mashed with a pinch of Salt, Pepper and Chilli Flakes.
  • Two Eggs, poached in boiling water for 3.5 minutes .
    • I poach my eggs by putting cling film around the top of a mug, dropping the egg in the cling film and wrapping it up – drop the cling film into the boiling water for 3.5 minutes. Unwrap the egg and pop it on your crumpet. Clean, Easy and you get the perfect poached egg.

Pop a pinch of Salt and Pepper on top of the eggs & sit down and enjoy!

It takes 5 minutes & it is yummy, healthy and it will start your day off right. Treat yourself babes, you deserve it!

  1. This is very similar to something I love to make myself for breakfast! Only difference is I fully cook my eggs in the microwave- it’s almost like a hard boil cause it cooks the yolk and white (:

      1. It usually works 1 egg = 1 minute, but it will need to be in a little bowl or ramekin and on a plate or napkin WITH a cover cause it pops quite a bit and can make a mess if left on it’s own haha

  2. You just gave me an idea on what to make tomorrow ❀ I've actually never had poached eggs before, so tomorrows gonna be the big day hahaha. On some school days I do tend to skip breakfast, which is horrible, but other days I make overnight oats – fills me up and I don't need to prep anything in the morning hahaha πŸ˜€

    1. Poached eggs are amazing – they are runny and yummy but healthy! Defo give it a go!
      Ohhh I love Overnight Oats – frozen raspberries are the best for that as they defrost and really soak into the oats πŸ’•πŸ’•
